Holley vs. Edelbrock: which is better for a Mustang carburetor upgrade?

I’m in the process of upgrading the carburetor on my classic Mustang, and I’m stuck between choosing a Holley or an Edelbrock. Both seem like solid choices, but I want to make sure I pick the one that’s best for my driving style. My Mustang is mostly a daily driver, but I do like to hit the track on weekends, so I need something that’s versatile and reliable in both situations.

From what I’ve gathered, Holley carbs are known for their high-performance capabilities, especially when it comes to tuning. They seem to have a lot of aftermarket support and can be fine-tuned for maximum power, which sounds great for track days. But I’ve also heard they can be a little more finicky, requiring regular adjustments to keep everything running smoothly.

On the other hand, Edelbrock carbs are often praised for their ease of use and reliability. People say they’re a bit more “set it and forget it,” which sounds appealing for daily driving. I’ve read that they offer solid performance right out of the box, but I wonder if I’d be sacrificing some horsepower compared to a Holley, especially when I push it at the track.

So, what’s the verdict? Has anyone here run both on their Mustang? How did they hold up over time, and which one felt better overall? I’m leaning toward something that won’t require constant tinkering but still delivers when I want to have some fun on the weekends
